Name: Vegan Pastelón
Ingredients: 6-8 very ripe plantains, cut lengthwise into strips; 3/4 cup to 1 cup of oil for frying; 1lb Vegan Taco Meat; 1 tbsp of vegan Worcestershire sauce; 1tsp of chili powder; 1 packet of sazón; 2 -3 tbsp of Sofrito; Adobo to taste; 1 tsp oregano; 20 green olives, pitted and chopped; 1 cup tomato sauce; 2 cups vegan cheddar or mozzarella cheese; 1/2 cup of vegan liquid egg (optional); Cilantro, chopped for garnish; SOFRITO INGREDIENTS; 1 large white onion peeled, rough chopped; 1 aji dulce peppers; 1/2 pound cubanelle peppers; 3 bunches (about 1/3 pound) culantro, leaves only (if you cannot find culantro, use cilantro but triple the amount); ½ bunch of cilantro; ¾ red bell pepper, sliced; 5-7 cloves of garlic; 1 tsp of oregano; 1 tsp vegan ham bouillon (optional); Salt and pepper to taste; 1-2 tbsp water, as needed
